Carvone's principal activity is as a potato sprout inhibitor. Evaluation of its use to control potato storage diseases is ongoing. At rates required for sprout suppression, carvone gives fungistatic control of Phoma exigua and Fusarium sulfureum and fungicidal control of Helminthosporium solani. It does not control F solani. Carvone is volatile and its activity decreases as its concentration decreases during storage.

Carvone has been shown not to affect the quality of ware potatoes or potato products.
